Quick Dinner: Tofu edition

Managed to stop by a local market today and pick up some fresh veggies. Tonight's primary objective was to use some tofu that had been sitting in the fridge. I pan-fried the tofu in olive oil and garlic and seasoned it with pepper salt and basil. I paired the tofu with some tricolor quinoa and some sautéed greens ( kale,spinach, and zucchini). The meal was a little thrown together but was light, tasty, and healthy.
