It has been real chilly lately so tonight, since I didn't work today, I decided to make a big pot of soup. Now I have never made soup before but I figured it could not be too hard so I gave it a go. I call this soup my Wild Rice and Vegetable Soup.
- I took a tablespoon of butter and melted it along with about a half of yellow onion in the bottom of the pot. I let the onions get tender so about 3 mins.
- I poured 2 boxes of vegetable stock in the pot and brought it to a boil.
- I then added my 1.5 cups of wild rice (already rinsed) to the broth.
- Finally I added my chopped veggies and seasonings (no real rhyme or reason, just what seemed right) : 1 chopped yukon potato, 1 chopped medium carrot, 2 chopped stalks of celery, 6 chopped crimini mushrooms, 1 tsp of minced garlic, 1 tsp of rosemary, a couple of chopped twigs of fresh thyme, and some dashes of sea salt and cracked pepper.
- Let simmer for 45-60min.
- once all items are soft (esp. carrots & potatoes) garnish with fresh parsley and serve.
So, homemade soup is super hot! It took me like 15min to eat one bowl but it was really good. It would have been nice to add a roll with the soup but just something to consider for next time. If you plan to cook this recipe and would prefer some meat, you can feel free to add cooked chicken or beef stock if that suits you.
